
My kids go crazy over eating these greens. Kale is so good for you, and also difficult to eat for little mouths unless it’s in a green drink, or in the form of chips. These are SO great, that even those who declare they hate kale have been known to down handfuls of this stuff. Admittedly, there’s oil involved, but a little goes a long ways.

Here’s the recipe:
Kale Chips
1 bunch kale, rinsed, dried, and de-stemmed torn into bite-size pieces
olive oil
sea salt
Spread olive oil on bottom of cookie sheet, place torn kale pieces on it, drizzle with olive oil and massage into kale so it’s all coated. (Then massage into hands – it makes a great moisturizer!) Sprinkle with sea salt and bake at 350-375, depending on your oven temperature for 10 minutes, stir and bake for another 5-10 minutes, depending on desired crispness. Eat it right away!

I also like to sprinkle garlic salt instead of sea salt, or garlic granules for a different flavor at times. I’ve also tried swiss chard, which my kids like better, but it’s more difficult to make as it sticks to the bottom of the pan. Swiss chard is much thinner when baked.

Excellent tip! We love kale (just had some tonight, with brown rice, etc). Gonna have to try making some chips…
